leftover haystack pizza

if you know us, you know that we make pizza at least once a week. and it has almost been 8 years in just a few weeks. i use to bring home dough from great harvest after my baking shifts, asiago sourdough was our favorite. now we use this recipe from becca and her mom. we never get tired of it because our pizza is never the same.

so about this haystack pizza. sunday night we had haystacks for dinner, shredded chicken in a crockpot with cream of chicken soup and lots of toppings to stack on your chicken and rice: bell peppers, green onions, mandarin oranges, ham, pine nuts, shredded cheese, broccoli, etc... so monday night we had two choices. 1) eat haystacks again because there was plenty leftover or 2) make pizza, slather on some pesto made from our garden basil and the rest of these lovely leftover toppings. we went for choice number 2 and it was the best! the pesto tasted so delicious with the chicken, peppers, green onions, mandarin oranges etc...

i shared this discovery, one meal turning into a new meal, the next day with my sister-in-law and she said she was going to call it, leftover haystack pizza. i thought i should post it, it's likely i'll forget. do you have any meals that could turn into a delicious pizza on day number 2? if so, please share.

this all happened last week, but once again pizza was on the menu tonight,garden pizza(we didn't have haystacks yesterday). pesto was the base because it is our summer favorite, and the toppings were all from the garden: tomatoes, zucchini, squash, broccoli, spinach, peppers, and basil (plus pine nuts and cheese)

and as uncle nathan would say, "delish nutrish!"

this one is topped with homemade pesto, spinach, three kinds of tomatoes from our garden and mozzerlla. a perfect summer garden meal. i liked the idea in Barbra Kingsolver's book, Animal, Vegtable, Miracle, where every Friday night is pizza night and the toppings change according to the season. I'm sure we will have some yummy creative concoctions with our new tradition too. For now the garden is still the spot.

i did pizza too

my dough recipe is the same as yours-hmm wonder why. just thought i would put my picture on too!!!

pizza

1 c warm water
1 tsp sugar
1 tbs yeast
3 tbs olive oil

2 1/2 c semolina flour (any flour works)
1 tsp salt
*mix warm water, sugar, and yeast until active, then add to oil, some flour and salt. Add in more flour to make dough workable. Roll into a pie shape. Makes 2 12" pizzas. We bake it at 425 for about 12 minutes.
put anything on it, you can't go wrong. our favorite is barbecue chicken pizza with green onions and mandarin oranges. what's on this pizza? i'm not sure... broccoli, red peppers, asparagus, pine nuts, fresh tomatoes, sauce and cheese. my toddler loved it so it worked for me.
