peasant bread


3 cups warm water
1 1/2 T yeast
1 1/2 T coarse salt
1 cup rye flour
1 cup whole wheat flour
4 1/2 cups white flour

mix until all ingredients are combined. don't knead. let rise for two hours. when ready to bake, the day of or up to 14 days later, cut off grapefruit size piece of dough, shape into loaf, let rise for 40 minutes, bake on a stone that has been preheated with the oven at 450. bake for 35 minutes, pour hot water into another dish so that steam is trapped in the oven.

my mom has the best curry recipe ever though, i'll ask her for it and post it. and it is WAY better than the one i brought you. we missed you too, we will come see you next week!
