Bowtie Poppyseed Summer Salad

This a an easy summer dinner that you can prepare ahead of time, serve cold, and eat outside. Our friend Alyson made it for us and then we've made it a few times since.

1 box bowtie pasta
2 chicken breasts shredded (we've cooked it ahead of time in the crockpot with a sweet marinade, we've boiled the chicken and shredded it since it takes on the dressing flavor, and we've also purchased a Costco Rotisserie chicken, all of these work)
1/2-3/4ths Creamy Poppyseed Dressing, Kraft makes it, and one other brand can't remember
About 1 cup dried cherries (we use our homemade dried cherries_
1 + cup honey roasted almonds (we've been making our own, instead of turning nuts in a pan with sugar and vanilla, I found a recipe to make them. First roast the almonds in the oven for a few minutes on about 375, then in a small sauce pan add 2 Tbs honey, 2 Tbs water, and 1 Tb olive oil with the toasted almonds. stir the almonds until the liquid is all absorbed, it takes a minute or two. then toss the almonds in a little bit of sugar with a pinch of salt. they are so yummy!

4hours before serving, or the night before, cook and drain pasta, toss chicken and pasta together with dressing, let sit. When ready to serve add cherries and almonds and more dressing if desired.
