taking the time


i've enjoyed taking just an extra minute to enjoy lunch with the kids lately
(instead of feeding them while i am unloading and loading the dishwasher etc...).
today 5 said, "mom for lunch i want a yummy salad with lots of sprouts."
he just eats sprouts by the handful.
that's motivation enough for me to take the time to make colorful, healthy, delicious meals we can all enjoy.
1. we've been eating loads of spinach (it can go in everything really)
2. pesto pasta is a winter staple
3. soup (tomato or carrot ginger)
4. edamame is always in the freezer
5. little peppers and hummus a good snack,
6. beans, still enjoying squash from our garden, and quiona a pantry staple
nothing too special, but good for you all the same

Mmmmm! That all looks SO DELICIOUS! Thanks for the reminder. Do you make your own hummus? I seem to remember you having a good recipe. I will have to discover what quiona is! I love that you had a fun lunch with your boys.
