chicken tortilla soup

1 Tbsp Veg. oil, 1 green or red pepper diced, 4 carrots peeled/chopped
1 onion chopped, 2 garlic cloves minced, 3 Chicken breast ½’s (Cut into thin strips or chunks), 3 large tomatoes or pint jar tomatoes and juice, 1 1/2 tsp ground cumin,
1 1/2 cups frozen corn, 1 can black beans, 6 cups chicken broth, juice of 1 lime,
1 1/2 cups shred mont jack cheese, cilantro, guacamole, sour cream
Heat oil, cook veggies
Med high garlic and chicken until chicken done
Add tomatoes, heat to medium, cook 5 minutes.
Stir occasionally Add cumin, corn, beans and chicken broth.
Rinse and drain beans. Heat to boiling, heat to low, simmer uncovered 10 min
Stir in lime juice
