carrot cake

2 cups whole wheat flour 2 cups sugar
4 eggs 1 cup appplesauce
1/2 cup oil 2 tsp soda
3 tsp cinnamon 1 tsp salt
3 cups grated raw carrot

beat eggs, add sugar, beat in oil, add dry ingredients. add carrot bake in 9x13 (50 min) or layer pans (35-40 min) @ 350

this is the most requested cake at our house-even clay wants it for his bday cake.

Apricot Cake

1 cup sugar
1 pint apricot puree (or nectarines)
2 eggs
2 cups whole wheat flour
1 tsp cinnamon
3/4 cup oil
1/4 cup applesauce
1 tsp slat
2 tsp soda (dissolved in hot water)
bake for 40 minutes 350

frosting
1/2 c butter
1/4 c milk
1 cup brown sugar
melt, boil for 2 minutes, let cool
then add 1 3/4 c powder sugar, 1 tsp vanilla
